
Peanut Butter Chocolate Chip Recipe

Those that know me, know that I love to bake. It brings me such a sense of joy and accomplishment. I have made everything from a space shuttle cakes to decorated sugar cookies and my most favorite treat, delicious cheesecakes. I will pretty much bake anything. But what I find most often is that I seek to bake things that I think those around me will enjoy most. My children love cookies! Pretty much any kind except ones with nuts (that they havent even tried but thats a discussion for another time).
I discovered (probably late to the game) that if I was making cookies anyway, I could just double the batch and freeze a bunch to bake later. That way we had fresh baked cookies in just a few short minutes without having to remake the dough each time. If we had visitors coming we would choose which cookies we thought they would enjoy and bake a few to share. Which led to a brilliant gifting idea.
Last Christmas my family and I mixed up dozens and dozens of different cookie recipes. We froze them (already scooped and portioned) and attached labels with directions for baking. On christmas we gifted our families a variety of frozen cookie doughs and the recipe cards so if they loved the cookies they could recreate them. Our most favorite cookie that we gifted and also make sure is stocked in our own freezer is a peanut butter chocolate chip cookie. It's a simple recipe but golly is it delicious. Hopefully this recipe will bring you joy just as it does my family!

Peanut Butter Chocolate Chip Cookies
Ingredients
1/2 cup butter melted
1/2 teaspoon baking soda
1/2 cup creamy peanut butter
1/2 teaspoon salt
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cup flour
2/3 cup packed brown sugar
3/4 cup chocolate chips
3/4 cup peanut butter chips
Instructions
-Mix or stir butter with peanut butter until smooth.
-Add brown sugar and granulated sugar and mix until creamy.
-Beat in vanilla, egg, baking soda, and salt.
-Mix in flour slowly until cokie dough forms.
-Stir in chocolate and peanut butter chips.
-Scoop 2 tablespoon sized cookie dough balls onto cookie sheets covered with parchment paper.
-Chill 30 minutes.
-Preheat oven to 350°F.
-Press cookie dough balls flat with the tines of a fork.
-Bake cookies for 8-12 minutes, or until slightly brown on the bottom and the top just loses the wet cookie dough look.
-Store in an airtight container for up to 3 days Or freeze for to one month.
Freezing dough Instructions
Mix dough as directed above. Scoop 2 tablespoon balls onto parchment lined baking sheet. Chill for 30 mins. Press cookies down with tines of fork. Place tray in freezer for 1 hr. Removed from freezer and place frozen dough in ziplock bag or airtight container. Frozen dough is good for up to 3 months. Bake from frozen at 325°F for 12 to 15 mins.
